I rewatched Van Helsing recently, directed by the same Stephen Sommers who did The Mummy with Brendan Fraser. It's a great fast paced movie that is a nice fun ride that takes you through some classic movie monsters like The Frakenstein monster, Dracula, Jekyll and Hyde, Werewolves, etc.
If Universal wants to take another try and their Dark World again, I feel like a Van Helsing movie with Hugh Jackman again would be a great way to do it. His character is one that doesn't age, like another character Hugh knows. At one point I think Channing Tatum was even supposed to do a Van Helsing movie before The Tom Cruise Mummy movie basically squashed all the Dark Universe plans.
While Van Helsing didn't do as well as studios hoped originally, I think with Hugh being at massive peak popularity, and if he wanted to do it, they could make something really great, and maybe use the movie to focus on one monster instead of a bunch of them at once.
With Universal on the verge of opening their Dark Universe land in the theme park, they definitely will want to have some movies come out to keep the interest.
